Sweet potato quiche with spinach

Ingredients

  • 6 sheets of dough for savory pie
  • 200 gr sweet potato
  • 175 gr spinach
  • 100 g feta
  • 1 red onion
  • 1 clove of garlic
  • 2 eggs
  • 100 ml cooking cream
  • handful of breadcrumbs
  • rectangular quiche tin

Preparation

  • Defrost the sheets of the savory pie dough and preheat the oven to 180 degrees. Peel the sweet potato and red onion and cut this into small pieces. Heat a dash of oil in a pan and squeeze the garlic clove over it. Add the sweet potato and onion and fry it for about 5 minutes. Lower the heat and gradually add the spinach. Keep stirring and continue stirring until the spinach has wilted. Cut the feta into small cubes. Mix the eggs with the cream and the feta cubes.
  • Grease the quiche tin with a dash of olive oil to prevent it from sticking. Line the tin with the slices of savory pie dough and press it to the edges. Sprinkle al layer with some breadcrumbs. Divide the sweet potato-spinach mixture over the bottom and pour the egg mixture over it. Finally, divide a handful of grated cheese over the top and bake the dish for about 30 minutes in the preheated oven.

Tip: this recipe is as a lunch up to 4 people and as a main course 2 people.
