Quinoa soup with sweet potato

Ingredients
- 400 ml diced tomatoes
- 350 gr sweet potato (peeled)
- 100 g leeks
- 500ml water
- 1 vegetable stock cube
- 100 g quinoa
- 170 ml greek yogurt
Preparation
- Put the water and the pack of diced tomatoes in a pan and bring it gentle to boil. Add the stock cube. Cut the sweet potato into pieces of 2 to 3 cm and add it to the soup. After a few minutes, add the leek and quinoa and cook the dish for about 15 minutes.
- Taste to see if the soup needs a pinch of salt or pepper. Serve the soup with a generous scoop of Greek yogurt.
Tip: this soup is delicious as a light meal or for lunch!
