Salmon with sweet patato

Ingredients
- 800 g cauliflower & broccoli
- 400 g salmon fillet without skin
- 125 g cream cheese garlic & herbs
- 8 g flat parsley
- 1 parchment paper
- 750 g organic sweet potatoes
- 4 tbsp olive oil
Preparation
- Preheat the oven to 200 °C. Cover a baking tray with baking paper. Peel the sweet potatoes and cut them into 2-3 cm pieces. Put them in a bowl and toss with 1 tbsp oil. Divide them over the baking tray and bake for 20 minutes in the middle of the oven.
- Meanwhile, bring a pan of water to the boil and cook the cauliflower and broccoli for 4 minutes. Drain in a sieve and drain.
- Remove the sweet potatoes from the oven, place the cauliflower and broccoli florets in between and drizzle with the rest of the oil. Cut the salmon fillet into pieces of 4 cm and also place in between. Sprinkle with (freshly ground) pepper. Divide the cream cheese over the vegetables and salmon with 2 teaspoons. Put the baking tray in the oven for another 20 minutes.
- Coarsely chop the parsley. Remove the baking sheet from the oven, sprinkle with parsley and serve.
