General Information

The sweet potato or sweet potato (Ipomoea batatas) is a plant of the bindweed family (Convolvulaceae). The sweet potato has an inulin-containing tuber, a thickening of the roots. It is the seventh most important food crop in the world and fifth in developing countries after rice, wheat, maize and cassava.

In contrast to the potato (which contains starch), the sweet potato contains inulin. Inulin digests more slowly than starch and is therefore better for diabetic patients.

What properties does the sweet patato have?
